1) Novels from the point of view of a father (where fatherhood is central
to the plot).
2) Novels where a GOOD father is a significant character.
Catalog searches for "Fathers -- Fiction" and "Fatherhood -- Fiction" have
been helpful, but limited. Headings like "Fathers and daughters -- Fiction"
don't make value judgements, so I end up wading through a lot of distnt,
abusive, stern, etc. fathers.
Genres okay. Ethnic/Gay/Single fathers a plus (this is starting to sound
like a personal ad). Thank you very much in advance.

Might consider "The Emperor of Ocean Park" by Stephen Carter. Though he
talks a lot about his own father he also refers to himself and his son in
comparison.

These titles are in the second category mentioned (good father is a
significant character):
"Plainsong" by Kent Haruf - although there a several key characters - there
is a father/husband character, whose wife leaves, who has to take over the
duty of caring for his two sons. This is a story where several characters
lives entwine. Excellent read!
"A Tree Grows in Brooklyn" by Betty Smith - one of my favorites (father may
be an alcoholic but he is loving and devoted to his family)
Alice Sebold's "The Lovely Bones" - one of the praises of the book in
reviews was the depiction of the grieving father.
Judy Pascoe's "Our Father Who Art in a Tree" - a short and very good read
"Mystic River" by Dennis Lehane

Empire Falls by Richard Russo would be a good candidate on both categories. Our book discussion group raved about what a good father the central character was, and how well characterized. Fatherhood wasn't the only focus of the plot, but it was a significant part of it.
