What about Pat Conroy's The Lords of Discipline?
I remember lots of terrible coersion in that.
And while it is not about bullying per se, Frank
Conroy's memoir Stop Time has some memorably
brutal moments along those lines, aside from
being a brilliant memoir of the pains, pressures
and thrills of growing up.
Homophobic bullies figure prominently in
Christopher Rice's A Density of Souls.
The Reappearance of Sam Webber, by Jonathan Scott
Fuqua, is sort of a classic coming-of-age story
for young and old readers, and there's a bully
who figures prominently in that.
There's a school bully in Haruf's Plainsong.

His "The Great Santini" has a father who's something of a bully.
Weldon Hill's "The Long Summer of George Adams" includes in its large cast a
wannabe pro boxer (one of the four Summers brothers) who tends to lean on
people. And it's a good discussion book, though longish.
