A few suggestions...
Non-fiction:
"A Little Too Close to God" (2000) by David Horovitz is a fascinating look
at life in Israel from the perspective of an Israeli citizen. It made me
feel what it was like to live in Israel on a day-to-day basis, and then
consider how the threat of violence influences its citizens' thinking. The
author is a journalist, and the style very approachable.
"From Beirut to Jerusalem" (1989) and
"Longitudes & Attitudes: Exploring the World After September 11" (2002)
by Thomas Friedman, NYT columnist. Friedman writes coherently and clearly
about the chaos that is the Middle East. As I recall, the first book is a
more objective look at the history of the conflict. The second is mostly a
collection of his columns.
Fiction:
"Martyr's Crossing" (2001) by Amy Wilentz deals with the fall-out from a
young Palestinian's death when he and his mother are detained at an Israeli
check point and medical treatment in delayed. Shows the agendas of all the
parties affected.
Sandra Benitez has some very good novels set in Mexico/Central America that
may be of interest to you.

Vida Loca", about the Latino gangs in Los Angeles (rated R.)
