My first suggestion would be to look under the name of Martin H. Greenberg.
This very prolific editor specializes in themed anthologies, often of
original work. I don't doubt he's done one on such engineering.

it for possible interest of others:
Sexual Chemistry: Sardonic Tales of the Genetic Revolution Brian M.
Stableford (Simon & Schuster UK

stories, and one article, about the possible effects of genetic
engineering. Although this is Stablefords first collection, all but one of
