Also a one-off title: CIRCLE OF IRON by Robert Weverka (Warner pb, 1979).
Then there's the LONE STAR series of "adult westerns" (some 80 or more
pb titles from Jove; I think they're still coming out) credited to
"Wesley Ellis" but written by a number of ghost writers (including gonzo
sf and mystery writer Neil Barrett, a favorite of mine, which is the
only reason I know of this series) which features a lovely but tough
young Texas woman and her Japanese (or half-Japanese?) friend Ki, a
martial arts expert; any martial arts aspects therein are however quite
minor compared to the gunplay, sex, and usual adult western hoo-ha stuff.

Marion Zimmer Bradley and her brother, Edward Zimmer, wrote two fantasy
novels featuring an order of swordsmen whose exercises sound rather ninja to
me. I don't remember the titles, but you should be able to find them
through myunicorn or the Library of Congress.

Roger Zelazny, and I believe one or two friends, edited an sf/fantasy
anthology on the martial arts theme early in the '90's, I think it was. I
don't recall the title, but it would certainly fit the description.
